Roasted Chickpea Burritos

An open flour tortilla spread with Greek yogurt and filled with roasted chickpeas, charred broccoli florets, diced tomatoes, sliced cucumber, avocado, salsa, and fresh herbs.

These chickpea burritos have become a weeknight staple in our house. Inspired by one of my favourite popular vegan cookbooks, you must try these out for yourself! Don’t like beans? These may just convert you.
